Daring Baker.. Take 1~

I have just started the daring baker challenges.  For the first challenge… Baklava from scratch!  Now, I am not such a fan of baklava, but it was very timely because I leave this very evening for a month in Turkey, the home of baklava.  Part of the challenge was creating the phyllo from scratch.  I decided to be crazy, and try to make it gluten free.. BIG MISTAKE!!  I think that gluten is inherently necessary for phyllo dough.  I won’t go into details, but the baklava ended up rock hard.

The initial baking looked ok… though a bit thick, and the sauce looked fine.  But when I let the syrup soak in overnight.. it did no such think.. it was left sticky and wet.  Ewwww

Needless to say, gluten free baklava is not a recipe I will try again.  And now, off to turkey and way better baklava!
